Hi everyone!

Ask most people in my life, and they’ll tell you I’m passionate about health, wellness and nutrition (especially FIBER) and I won’t stop talking about my Instant Pot© (IP)! I’m thrilled to create an online space that will incorporate all of my favorite things!

Let’s get started!

So, back in January 2017, my family decided to become ‘Weekday Vegetarians.’ Our decision to do this was based on the deleterious effects of meat OVER-consumption on our health AND on our environment, and we haven’t looked back since! There was/is no official definition of ‘Weekday Vegetarianism,’ so we decided to make our own rules:

  1. From Monday morning through Friday lunch, no meat or meat-based products (no chicken, no beef, no pork and no seafood).
  2. We still continue to eat eggs and dairy (Both food categories are ‘complete protein’ sources) .
  3. We allow for some wiggle-room on special occasions and/or vacations.

Before this transition to a more plant-based lifestyle, I was accustomed to using this common formula for mealtime:

Meat, Veggies, Starch

However, now I had to shift my meal planning and focus more on giving my family the best overall nutrition at mealtime without using meat.

I had to up my meal-making game in a tremendous way. The primary tool that has helped us deliciously and nutritiously transition to this new way eating is my IP!

Where do we go from here?

I’m uncertain where this blog will take me, but for now, I’d love to use it as a forum for amazingly delicious and easy vegetarian/vegan IP recipes! I will also make suggestions of how to ’round out’ that recipe for mealtime, as well as nutritionally-highlight one ingredient from each of these recipes.

What I hope will even further set my blog apart from others, is I’d like to hear from YOU! Once per month, I’ll create a blog post answering a nutrition-related question from one of my readers, called Ask Sunny Seeds! So – ask away!

About Me:
Hi! I am Lisa Salinas, a Clinical Assistant Professor, registered dietitian nutritionist (RDN), with a PhD in nutritional sciences, as well as a mom! My greatest interests lie in pediatric nutrition, preventive medicine/nutrition and pulse intake/benefits. Before taking some time away from my professional life, to have and raise 2 children, I worked as a dietitian in a hospital setting and within the food industry. I am involved in nutrition research and have provided dietary counseling and education to a variety of different populations. I now teach nutrition at the university level and do some nutrition counseling on the side. In my spare time, I enjoy spending time with friends and family, non-pandemic-time traveling (i.e. seeking out new foods/dishes to enjoy!), Peloton-ing, and cooking/baking.
